Can I convert VGA to cat5e and then send it via ethernet over power adapteors to a remote LCD?
No, this will not work. The box acts as a balun.

I have a sky box with an S video connection an I Mac that needs an adapter to VGA both need to connect to the VGA cable that runs to the projector. What box do I need, the sound from both the Imac and the sky box are run directly to an amp so I don't need to relay these.
I am sorry but this is not suitable. We do stock a VGA switch box. We do not stock any s video switch boxes.

How will this product operate with regards to sending signal over a network. I.e. can one end be plugged in somewhere on the network and then the opposite end be plugged in anywhere else?
Yes, providing you configure the network to be "point-to-point". Usually achieved by connecting the two network access points directly together at the patch panel.
